Tasting notes

Eye

Visual intensity is enhanced by a bright, brilliant garnet-purple color.

Nose

A subtle universe sculpted in depth by dark, candied fruits (blackcurrant, black cherry, blueberry), but also by spicy (cinnamon), vanilla, chocolate and lightly toasted tones enhanced by the barrel. Scents of licorice, plum and pepper intertwine with aromatic herbs.

Mouth

The palate will surprise you with its silky volume, sustained by generous, digestible fruit. Woody, satiny notes are superimposed on aromas imbued with spices, chocolate, licorice, black cherry, blackberry and blackcurrant that refresh this luxurious example.

Service and conservation

Ideal serving temperature 17°C. A noble wine to be enjoyed now or kept for 3-4 years.

Food and wine pairing

A noble wine with character, it goes perfectly with a glazed Iberian pluma with spiced blackcurrant reduction, sweet potato purée, small spelt risotto with chanterelle mushrooms, beef tenderloin Wellington.

Winemaking


Grape varieties : Syrah, Grenache.
Method : Cold skin maceration before fermentation in vats. Temperature-controlled vinification. Barrel ageing for 12 months (50% new barrels per vintage). Fining and filtration before bottling.

Location: La Londe-les-Maures (83).
Floor : Siliceous clay, structured with pebbles and broken quartz.
Specificity: Filtering soil, well oriented on hillsides.
